Pinsa gets its name from “pinsere,” meaning “to press.” Each and every Pedone Pinsa crust undergoes a careful hand-pressing process in our local SQF-certified facility, further preserving its gases created during fermentation. This lends to pinsa’s supple, cloud-like structure—resulting in a crust that, while practically weightless, is packed with flavor.
