Our Amatriciana pinsa is an innovation of a traditional Italian pasta. Layered with a thick and creamy pomodoro sauce, guanciale, and sprinkled with pecorino and cracked black pepper on top of a light, crispy crust, the Amatriciana pinsa is savory and flavorful.

Authentic Amatriciana is a simple, yet beloved, pasta dish made with pork jowl and pecorino cheese made from ewes’ milk. Later, the pork was cured to create guanciale, and Amatriciana sauce was added after the discovery of one previously unappreciated ingredient that has become fundamental to Italian cuisine: the tomato.
