Pinsa Pesto Egg Scramble

Ingredients:

  • Pedone Pinsa crust
  • 2 tablespoons pesto
  • 1 tablespoon butter
  • 10 grape tomatoes, halved
  • 5 large eggs
  • Salt and pepper to taste
  • Freshly grated parmesan

Directions:

  • Bake your pinsa crust to desired crispiness—around 8-10 minutes in a 425°F oven
  • While pinsa is baking, melt butter and pesto in a medium pan
  • Add halved tomatoes to pan and sautee for 2-3 minutes
  • Add eggs and whisk in pan
  • Once cooked to your liking, remove from heat and top with salt and pepper
  • Remove crust from oven and place scrambled egg mixture over pinsa
  • Top generously with freshly grated parmesan
  • Buon appetito!

Avocado Toast Pinsa

Ingredients: 

  • Pedone Pinsa crust
  • 1 teaspoon olive oil
  • 2 teaspoons minced garlic
  • 1 large avocado
  • Juice of half a lemon
  • ½ cup diced tomatoes
  • Feta cheese crumbles
  • Crushed red pepper flakes
  • Salt and pepper to taste
  • Drizzle of hot honey or balsamic glaze

Directions:

  • Spread olive oil and minced garlic atop pinsa crust
  • Bake your pinsa crust to desired crispiness—around 8-10 minutes in a 425°F oven
  • While pinsa is baking, mash avocado in a bowl with lemon juice, crushed red pepper, salt, and pepper
  • Remove crust from oven and spread avocado mash over top
  • Sprinkle diced tomatoes and crumbled feta cheese evenly over
  • Finish with a light drizzle of either hot honey or balsamic glaze
  • Slice and enjoy!

Hashbrown and Bacon Pinsa

Ingredients:

  • 1 tablespoon olive oil
  • 2 cups shredded hashbrowns
  • 2 teaspoons garlic powder
  • 5 slices of crisped bacon, chopped
  • 1 cup shredded cheddar cheese
  • Salt and pepper
  • Chives for garnish

Directions:

  • Pan-fry hashbrowns in olive oil for 5 minutes
  • Season with salt, pepper, and garlic powder then remove from heat
  • Disperse hashbrowns and chopped bacon evenly atop crust
  • Sprinkle cheddar on top, then bake in a 425°F oven for 6-10 minutes or until hashbrowns are golden brown
  • Remove from oven and finish with chives, salt, and pepper
  • Delizioso!
