Each Pedone Pinsa crust undergoes a 48-72 hour cold-fermentation, and is then hand-pressed to perfection. The cold-fermentation process infuses the crusts with hydration and breaks down starches. Not only does this process help reduce the overall gluten content, but it gives our crusts a light, airy texture that creates a one-of-a-kind crispiness once baked. In addition to having 1/3 less gluten than traditional pizza, our crusts have almost 10g of protein per serving.
